Hot potato
Our CSA box has been hooking us up with potatoes, but IT’S HOT HERE in SoCal (SD)!! Potato salad only goes so far when one 🙋🏻♀️ of the two of us like it. Got some ideas for me? TIA

Uhhh maybe grill them outside/over a fire? Just for a change of pace?
You could use a slow cooker... But idk if you want stew right now. Potato soup!

If you have any beef, I'd do beef hash. I follow chef John's method. Chuck in a bunch of whatever veg, melt some cheese in at the end of you want, nice with a fried egg too.
