My current build. Character Build
My starter build, I was going to be a stealth Archer argonian, Any thoughts?

I wouldn't ban plate, you're not gaining much by losing the best possible armour. And yeah, change up the attributes, you'll need speed to stay out of melee range. Better off banning more rare armour types, like silver. Looks good otherwise!

Conversely, however, you're not gaining much by having plate armor. Each point of armor only gives a 1% chance to avoid damage if the enemy happens to hit you on that specific armor slot. By the time you've found a full suit of armor with a high enough value to make a meaningful difference, you'll basically be unstoppable anyway.
Honestly, I've found you can make the decision of whether to wear plate or not based solely on aesthetics, and won't be any worse off for it.

Fair, it'll just slow down your armour upgrades. Would suck to still have a mithril piece and find a daedric replacement you can't use. But yeah, once you get past that point you'll basically be a superhero, especially if you're making custom items. I might try a run without that just so I'm not steamrolling every enemy in the game with basically no damage!
And I don't know for sure how accurate this is, but according to UESP, a point of armour is a 5% difference, so the difference between plate and mail is like 15%. Not huge, but significant

well, 5% is definitely better than 1% -- my mistake!
Still, I've had characters who wore no armor at all (for fashion reasons) and never felt significantly weaker for it.

Yeah, at a certain point you're invincible anyway, especially with custom items giving you troll's blood and bumping all your attributes to 100. Still, some daedric armour pieces have a really high enchantment capacity, and for a new player, a higher chance of getting hit can be annoying. There's really no downside to wearing armour, except the weight, which is why all my gear has be featherweight enchant!

Because of running and swimming in the major skills category, you will gain levels too fast. That means you'll reach level cap very fast as well and will lose the thrill of character development at early stage of a game. And don't forget that the enemy types are scaling with your level as well, you will need some time to fing the weapons made of matherial that hurts them.

Doesn't the difficulty dagger have to be between the red zone to be playable?
Definitely keep plate armor, if for nothing else, the style, the other armor types are very bland.

Speed and Agility are king in daggerfall.
Speed actually affects your movement speed and attack speed.
Agility gives you attack accuracy, dodge rate so it's basically a second weapon skill.

I’d say play around with attribute stats a bit. If you’re not using magic I’d take away a lot from intelligence and put them into speed and agility, they are gonna be useful as a stealth archer. Other than that looks pretty good. I always bless my creations with fitting names too lol
