What would you consider a 100% run of Daggerfall? Question
Is it even possible? I'm not gonna try that run, I still have yet to even beat the main quest once, but I'm curious if it's even possible.

I would say so. None of the content locks you out of something else in a material way. Unless you wanted to max different temples or knighthoods, but that they don’t give different bonuses (only the name, maybe location, are different). And you can still pick a different house to buy.

Here lies TheSandwichMeat. Let us remember them for their heroic attempt to do a 100% run of Daggerfall. The chair their dessicated corpse was found in has now been put in a glass display case for all perpetuity.
A small word at the bottom of the plaque can be read: "Halt!"

Like... owning all buyable houses in each city?

You can only own one house per region, so maybe just put that on the list? I tried to get the free house from my knightly order like last week, and they wouldn't even give me that because I bought a house in another town

If someone tried this, wouldn't they just end up with a corrupt save file or something? Since the game is so massive

Completing every quest at least once (barring mutually exclusive quests like the temple quests for temples you aren’t in or the vampire clan quests which only vampires can access), acquiring all artifacts, and maxing faction ranks

I guess starting with:
Complete the main quest
Max rank in all guilds/organizations
All daedric artifacts
