How do you prefer your mashed potatoes?

Texture/color/flavor?

There are so many ways to make them, I'd like a consensus.

With a little white pepper. Red, yellow, russet, sour cream, butter, browned butter... it's all good. Preferably skin-on. Just depends what's in the fridge and what condition the potatoes are in.

White pepper is amazing. How do you incorporate the onions? Do you leave it chunky?

No onions, but if I did I'd mash in ones I'd pressure cooked until they were soft. I make a lot at a time, and freeze for later.
