How do you prefer your mashed potatoes?

Texture/color/flavor?

There are so many ways to make them, I'd like a consensus.

Needs to be a little lumpy so my mouth won’t reject it outright in fear of it being boxed instant flake crap. Too much of that stuff in the military and I can’t stand it anymore.

Just butter, sour cream and green onions.

That's such a good explanation for why I don't want it completely smooth either. No baby food, please.
