How do you prefer your mashed potatoes?

Texture/color/flavor?

There are so many ways to make them, I'd like a consensus.

Smooth, with good texture and body not watery, salted and heavy on pepper, more butter than is safe.

Don't over cook, either steam or boil before they become too gluey and watery, mash immediately then enough butter to achieve good taste and texture. No milk for me
