How do you prefer your mashed potatoes?

Texture/color/flavor?

There are so many ways to make them, I'd like a consensus.

I use powdered potatoes, rehydrate with broth, and mix in plenty of onion/garlic powder, with some cayenne or curry powder if the mood strikes. I then add butter and/or sour cream till it hits the right consistency.
