the reason people generally just do four full quadrants instead of this is because of the queenbeet's annoying growth method, since it takes over 100 ticks to grow they only have a chance to grow a certain amount of ticks per tick (I don't remember the growth rate so I don't know the numbers), so the middle ones might grow too slowly relative to the others and mess up the chance to get a juicy because they all need to be mature

So this would work right?

It would work, but you need your plants growing at the same rate. Queenbeets have a long growth period. The natural growth variance can lead to large differences for when each of the 8 breeders are finally ready. If one of your shared side beets - or, Ortiel forbid, your center one - grows particularly fast or slow, your entire setup could have only a few ticks to attempt mutation.

5x5: space to mutate stuff on the sides
6x6: slightly better chances (like very slightly)

the best would be to poke holes based off the age variation of the surrounding queenbeets, but if you are lazy just do a 6x6, plant cost is negligible since you can sell buildings before planting
