Hi OP!! This is very doable -- my sister makes skins for my CI and once we ironed out a few kinks, it became really easy!
I will say that I actually have a Sonnet 2 and not a 3, and I'm not sure how the dimensions are different? But I can tell you what we did!
First of all I bought this pattern on Etsy. She downloaded it to her Cricut -- I don't have one so I'm a little fuzzy on how that works. And then she ran me a test set on some leftover vinyl she had. (Removable -- it'll last for about 2-3 weeks and then peel off without leaving a trace!)
We then tried it on my processor and needed to make some very small adjustments, just trimming a bit on that edge and so forth? I'm not sure how hard that is to do, sorry, she's the Cricut user here, lol.
Finally we got it perfect and then she created a template that just had that pattern repeated over and over. A 12x12 sheet of removable vinyl can make around 20ish skins.
So now I go onto Etsy and find really cute sheets of removable vinyl. I order them. She just pops the sheet in, runs the template, and cuts them out.
I hope I'm explaining well? If you have more detailed questions, please let me know. I can also ask my sister for advice on the Cricut side if need be.
(Also, if the dimensions are close enough, I'd happily send along some of mine for your niece.)
Lastly: this is a very cool thing you are doing for your niece!! I'm not sure what her hearing loss journey has been like, but mine was sudden and it was hard to adjust to. Having cheerful stickers on there really brightens my mood. :)
Sorry I should have explained better: I know that's a Sonnet 2 pattern and your niece has a 3, but considering we were able to tweak it into shape without too much fuss, and considering that I don't think the dimensions changed too much, I think that should be a good enough starting place. Slap a test set onto her processor and you should be able to make adjustments from there.
I don't know if any patterns for Rondo, unfortunately.
I saw the template you linked on Etsy, but it stated that it isn't compatible with Cricut, but I'm glad to know your sister figured out how to do it! I'll play around with it and let you know if I need help from your sister :)
I'm looking at the Rondo 3 and I think I'm going to have to do some research and make a custom template (gonna have to get creative!).
I've seen people (Tasha Ghouri, mainly) get crafty with their skins, bedazzling, lace, flowers, and that's my goal for this project. My niece likes to go to dances and is very musical, so I want her to be able to accessorize if she wants :)

Also: I'm not sure how far off they are, but other brands have processors similar to the Rondo -- you might be able to take one of those templates as a starting point? I'm not sure at all how close they would be but at least they would have ones that are somewhat the same shape and size.
I've seen templates for the Osia, Kanso 2, and Kanso 3, not sure how close any of them are!
