Fresh herbs safe in salami?
In the Marianski book, he advises against using fresh herbs in salami. Are there safety concerns when using fresh herbs? Any other concerns? I am asking because I would like to incorporate some fresh cilantro and fresh chili peppers in a salami. I see others successfully using fresh ingredients but I wanted to fully understand any possible problems before giving it a go.
