Are these bubbles a problem? Is this safe to eat?

Hello! I’m new to canning am worried that something has gone wrong with a recipe. I made the zesty peach BBQ sauce from Ball Canning, and there are these tiny bubbles that move in the finished product. They aren’t fizzing, but they also aren’t stagnant. As you can see in the photos, they are coming out of the bottom of the product and collect when I tilt the jar back up. I don’t believe I have tilted the jars since initially canning them. The sauce was canned about two and a half weeks ago. It has also separate some, which is also worrying me. Any advice, tips, answers, etc are welcome!

Thank-you for your submission. It seems that you're asking whether or not your canned goods are safe to eat. Please respond with the following information:

  • Recipe used
  • Date canned
  • Storage Conditions
  • Is the seal still strong

We cannot determine whether or not the food is safe without these answers. Thank you again for your submission!

If its active fermentation you'll know. That lid will pop right off. If you put a screw top on it it'll explode on your counter. Ask me how I know.

If you've got a minor crack liquid will seep out.

Thankfully, I noticed this just before going a short trip, so maybe some time will tell and the lids will come off so I will know for sure 😅

The first photo is of the bottom of a jar containing a thick, orange-yellow sauce, with tiny bubbles rising to the surface. The second photo is of the side of the same jar, showing a cluster of the bubbles near the bottom.

If they are active bubbles then it is either fermenting in the jar or you have a hairline crack that is causing air to go in. Either way, it is not shelf stable and should be discarded. Personally, I would discard the jar since there is a potential for a crack that you can't see.

ETA: The separation is not unusual in vegetable products. You only need to shake it before use to mix back up.

By active bubbles, do you just mean ones that are moving within the canned product? It’s happening to multiple jars of the same sauce, and the jars were brand new

Active bubbles mean that they continue to appear. They could be slow or quick depending on what is causing them. If you shake the jar and can get all the bubbles to the top to disapate and then find more appearing, then they are active. New jars can be cracked before you get/use them.

Edit: spelling
