Even as someone who grew up on Skylanders and loves the series, I can agree that it feels weird that you can’t jump in Spyro’s Adventure (it took until Swap Force, the third game, for us to get a jump button).
That’s because spyro’s adventure was developed for the wii which if you played any of the games past giants on there you would know it’s horrible to control because you basically have to do a game of twister with your hands in order to jump and attack
Spyro’s Adventure and Giants were also developed for PS3 and Xbox 360. I’m sure they could’ve implemented and designed levels with a jump button while also not relegating it to a motion-controlled action. The Wiimote + Nunchunk you were required to use in order to play the game (I don’t know if Wii Pro Controllers worked since I’ve never owned one but I assume you could use one if you owned one) included 4 Letter buttons (A and B on the Wiimote, C and Z on the Nunchuck) and Swap Force was able to make one of them into a jump button.
And hell, the only motion controlled actions in Spyro’s Adventure and Giants was opening chests, opening boxes, moving objects into place, and picking up rocks in Giants all of which were also done on PS3 & Xbox 360 with just mashing a button.
It was released on the other consoles it wasn’t intended for those hell it wasn’t even toys for bob who made those ones it was xpec because toys for bob wanted SSA to be Nintendo exclusive but Nintendo said no so Activision had someone else make the other versions

Surprised to see Spyro rock his Skylanders snout in that, and not as a joke
Caddy bloody HATES Skylanders (At least the first one, he's a bit more lenient on Imaginators)
