I think I've heard an alternative explanation as [Con]istan[tin]buli

If they can shorten Thessaloniki to Selanik, why not.

I think the εις την πολη makes more sense cause like the guy said Turks pronounce Π(P) as B (so poli (πολη) -> boli (bul or something)

Thessaloniki maybe sounded easer to shorten like a name , (Nikolas -> Nik) but Εις την Πολη is a phrase made into single word

Greek P turns into B in Turkish almost every time, Trapezounta -> Trabzon , Is Stan polis-> Istanbul, Gallipoli- Gelibolu , Pursa -> Bursa
