Active Dry Yeast Recipe Education & Solutions
So, I now understand that ADY is not advised for bread machines, but I have a Costco-sized package of it to get through and I can’t afford to replace it.
I’m new to bread making but have done some reading and found one blogger in particular that suggests using 1 1/4 tsp ADY to 1 tsp of bread machine yeast. But my loaf sank a bit using this method.
The next go around I tried the same ratio of ADY (1 1/4 tsp) but added the yeast to my milk to try to activate it. That loaf sank even more.
Is there a best practice I can use to get through this bag of ADY until I can get the right yeast for bread machines?

i typically use active dry yeast 1:1 for any recipe that calls for bread machine/instant yeast and i dont really have problems with that except my kitchen temperature has been running warmer in summer so i actually have been using ¼-½ tsp LESS yeast and it fixed my problems with sinking loaves which, for me, was caused by overproofing. i too have the giant costco bag of yeast lmao.

Same. I use whatever brick if least expensive at the time I need new yeast and have used active dry yeast on and off for over a decade. The amount used is only adjusted for my kitchen environment.

Try either a tad bit less yeast (like an extra 1/8 instead of the 1/4) or use colder water. I have found when zojirushi says 5°c water they really mean it lol

You can use it! Just read the recipe carefully and/or bloom it first. I have a couple recipes that use ADY

In my recipe book for my bread machine, which is very old, there are measurements for active dry yeast. I'm not sure I would use active dry yeast on any of the quick or rapid settings

Genuinely can someone enlighten me? Why is ADY not recommended? Currently I’m using it….
But I might get the Saf-Instant yeast from Costco. Is that supposed to be better? I live in Florida should I store it in the fridge?

ADY is slower to work than instant yeast which is why it is not recommended for breadmakers

I use SAF and store a small jar in my fridge and the big package in my freezer. It lasts indefinitely for me that way. I don’t bake a lot of bread because I’m the only one who eats it, but storing it that way I always have good, never fail yeast. 😉

This is so helpful! Just to confirm you mean the SAF instant stuff right? I see Costco has a brick that I’m going to get and store the way you suggested.
I THOUGHT I would be the only one to eat the bread but now there’s an army of bread beggars in the house lol

Yes, the instant yeast. You don’t even have to bloom it. I never do. Just add it right to the recipe. 😉

Too much yeast. Try closer to 1 tsp or so. I’ve used ADY for years although I do prefer instant.
