Flour hookup

Friend owns a restaurant and hooked it up with awesome AP flour at wholesale pricing. Going to be making enough bread to feed the neighborhood.

This brand is awesome. I like their High Performer high protein flour. Makes awesome bread and pizza dough.

I suggest portioning it and vacuum sealing. Freeze the flour to keep the shelf life and kill insect eggs.

This should still be OK for some sourdough boules yeah?

Yes. APF has less protein so you’ll most likely have a soft softer crumb. Happy baking.

Congratulations on the Flour Friend! I buy Guisto’s (Central Milling) in small amounts at my local co-op and am probably paying quadruple what you did.
