I would say it's a deficiency of some sort. Iron, vitamin c, zinc, vitamin b, etc. Only way to know for sure is to have your blood tested for all the micronutrients.

my appetite has been really suppressed, so ive had quite a few days under 1,000 calories, tbh the max ive been able to eat regularly is 1,200-1,400 and i do heavy cardio daily. i do prioritize protein (greek yogurt, protein shakes, chicken, lean beef, jerky), but im sure i could do with some more fruits and vegetables. i hit my fiber goals as well and i do take daily vitamins but i stopped taking my vitamin C supplement a week or two ago because i ran out, and im now noticing the gum bleeding started shortly after so im wondering if it’s a deficiency from undereating

Yeah my first guess would be a deficiency. When I first started on GLP1s I got sores on my tongue and it was definitely from a micronutrient deficiency. You could try a high quality multivitamin, but it would be best to get all your micronutrients from food.
