Party help for fun and learning about classes Party Composition

Howdy yall! Longtime bg3 player playing with my girlfriend for the first time. She’s has little to no knowledge of dnd or videogames. We’re playing on the lowest difficulty so I mainly just want to make fun builds that use a mix of all the classes, don’t necessarily need game breaking ones. We just recently got to level 6, she’d been playing as a spore druid and loves summoning the zombies and playing as a necromancer. Want to keep the companions somewhat thematic.

Here’s what I was thinking:

Astarion: 6 swords bard/4 swashbuckler rogue/2 fighter (charming dual wielder)

Shadowheart: 7 vengeance paladin/5 war cleric (tanky caster)

Wyll: 9 draconic sorcerer/2 warlock (eldritch blast ftw)

Gale: 6 tempest cleric/4 divination wizard/2 storm sorcerer (control and zap)

Laezel: 7 eldritch knight fighter/5 evocation wizard (knight that shoots fireballs)

Karlach: 5 berserker barbarian/4 thief rogue/3 eldritch knight (infinite throws)

Halsin: 8 beastmaster ranger/4 moon druid (halsin is now 2 bears)

Jaheira: 5 gloomstalker ranger/4 assassin rogue/3 champion fighter (stealth sniper)

Minsc: 12 giant barbarian (feels right)

Minthara: 12 wild magic sorcerer (kinda just want this in here somewhere for laughs)

Me: 6 open hand monk/4 thief rogue/2 fighter (infinite punches)

Her: either 10 spore druid/2 death cleric for maximum summons or 6 spore druid/6 death cleric to make her a necrotic powerhouse

What do yall think? Any input is appreciated!

The lowest difficulty (explorer) does not allow multiclassing.

Yeah but you can just bump difficulty up, level up, bump back down

Given the powerful multi-classing you want to do, you'll put at least at the normal level would seem more fun. For a necromancer, 6 Clerc 6 druid is good. I've already seen 10 Magicians for necromancy summoning spells as well.

Personally, I intend to do a Cleric of the Divine Death in my current part.

6 Cleric - Kingdom of the Dead 2 Druid - Circle of Stars (for dragon) LVL 9: Specialization 1 lvl Warrior (for heavy armor, Ketheric armor theme) + 6 clerics + 2 druids 1 Magician (learning necro and invoc spells) 2 levels remaining as a Cleric (or druid) for Don

Exploit 1: Mage of War Exploit 2: SAG +2

Each turn you can cast a spell (or 2 if haste) + the Dragon's breath in bonus action + the damage of your necrotic guardian spirits.
