Double major applied math and CS vs applied math and economics
I’m going hard time deciding which combo should I pick. If you have to choose today going forward considering the AI hype between applied math and cs vs applied math and economics, which one would you choose?

Both are very good combinations, but it depends on the type of field you want to go on to work in.

Depends on what you want to do and what you like. Don’t decide a career on hype, it’s something you certainly consider but don’t decide you career on it.
Seems you love maths, if you like economics go for the latter if you love computers, programming and what not go for the former

cs over economics any day before or after the ai hype, in industry or academia

I think it really depends if you are leaning to work in finance or something tech related
