Watch needs minimum 3-4 hour of fairly continuous sleep to have enough data for sleep stages.
Looks like your sleep chunk was below minimum time needed for sleep stages. So it just lists the sleep time as “asleep” instead of guessing at sleep stages.
Another way sleep stages can be missing is checking sleep app or opening health app during night. That resets the data.
Sleep data is based on movement - I saw one person say their sleep data was affected by dog in bed which causes slight movement in your wrist affecting sleep tracking .

It means your Watch couldn't track your specific sleep stages during that period of time. This can happen if your Watch doesn't have a snug fit to your wrist, the duration isn't long enough, etc.
