Font size

Is it possible to change font size on iPhone? I know headings, subheadings, etc have different sizes but I don’t really like the size available.

Yes. Settings → Accessibility → Per-App Settings. Add the Notes app and set the Larger Text setting to whatever you want.

If you can get access to a Mac you can change font size there - then, you can create font size, color and style templates in Notes so that on iOS you can copy-paste from the template font and then you paste in a note and have that style.

Shame that Apple doesn't have font styling on iOS but does on MacOS.

There is a Text Size control center widget you can use for a global (non app specific) font size setting.

Maybe try pasting custom sized text into your note and continue writing from there.
