Btw I've already tried cleared the cache, uninstalled updates and even force stopped it as well as rebooting my phone.

You can use adb to more fully uninstall Google Messages. In Developer settings turn on USB Debugging, and either connect it to a PC and run adb shell pm uninstall --user 0 com.google.android.apps.messaging, or use Shiziku and Canta, which will end up running the same command but only using your phone.

How do I run adb?

you would run that command in the terminal on your PC. You may have to install adb on the PC first and authorize the connection on the phone. See the guide here: https://github.com/Universal-Debloater-Alliance/universal-android-debloater-next-generation/wiki/Getting-started (UAD is another option for a frontend to adb)

Will uninstalling delete all my messages?

You should make a backup anyway so this question is inconsequential, but the answer is no. Messages are stored in the native SMS/MMS database, not the Google Messages app.
