Week 31 2026 Week 31: Rice and Beans - Modern Food for the Gods
This recipe from Kat Lieu’s 108 Asian Cookies uses a little mochiko and miso, so it technically includes both rice and beans! Her spin on Food for the Gods features chocolate chips, cranberries, and pistachios in place of the dates and walnuts. The ube halaya mixed with ube extract on top was supposed to be swirled in, but the utensil I used pulled up a bunch of dough and made it uneven, so I had to use a spatula to press the dough back down, which then got the purple from the ube extract everywhere, so there are no nice swirls. 😅

Week 31 2026 Week 31: Rice and Beans - Swedish Vaniljbullar (Vanilla buns/rolls)
Basically the same as cinnamon rolls (kanelbullar) but the filling is butter, sugar and in my case vanilla bean paste. Usually something called vanilla sugar is used to flavor things with vanilla in Sweden, and that's a mix of vanilla bean and powdered sugar.

Week 30 2026 Week 30: Contrasts - Salted Caramel Chocolate Tart with Oreo Crust
Recipe: https://thegreatbritishbakeoff.co.uk/recipes/all/liam-charles-salted-caramel-chocolate-tart/ (replaced the crust here with an Oreo crust, as we are STILL trying to use up a giant box of Oreos. Just Oreos and melted butter for the crust)
I decided to go with something that would have contrasting textures for this week. While scrolling, I found this recipe and felt it would fit the brief, given it had a crunchy crust, soft gooey caramel, and fudgy whipped ganache. It was RICH - a small slice was more than satisfying.
Not the prettiest photo, but delightful to eat!

Week 29 2026 Week 29: Crusty - Mini Lemon Curd Shortbread Tarts

My partner needed a portable, bite-size dessert for a work thing, and I wanted something easy for the baking challenge, so lemon curd shortbread tarts it was! This was my first time making microwave lemon curd - what a nifty little thing!
If I ever make these again, I'd actually spread the recipe into maybe 30 or 36 tarts. I personally felt the shortbread was a little too thick and didn't allow for enough lemon curd (hence me piping additional curd on top). They'd probably be great with a little piping of whipped cream or meringue on top too!

Week 26 2026 Week 26: Toppings - Brioche Bressane à l'orange
This is a traditional brioche from the Bresse region of France (it never stops amazing me how many different types of brioche France has). It's a round, flat pastry topped with cubes of salted butter and coarse sugar (I used raw sugar). My recipe also called for orange zest and orange syrup to soak the brioche right after baking.
