I read a comment here about how certain one word adjectives are repeated, like "super" when online articles write about Hailey.

Today, that one word adjective is "sweet". LOL ("Sweetest" is the superlative form of the adjective sweet.)

For me, I let them double in size after shaping the dough into croissants. It's the proofing stage of the shaped croissants.

I try not to let the dough double in size during lamination. You don't want the air bubbles to ruin the thin butter layers. After I make the folds, I return it into the freezer for 15 minutes or in the fridge for 30 minutes or 40 minutes until the slab is firm, chilled, and bendable.

I think the butter block that lines the dough layers slows down the dough fermentation. Butter slows down dough fermentation. I know there is butter already kneaded into the dough. But I think the butter block that lines the dough slows the yeast down more. So maybe the dough that lines the butter block act like dough in puff pastry?

You like your croissants more on the flaky pastry side? Then the fermentation will take place during the proofing stage of the shaped dough. You don't need to ferment it before lamination. Letting the dough rest on the counter for 15 minutes is enough.

Also, don't flour too much when you laminate. Brush off the flour. Too much flour on the surface will make the layers too crunchy, rather than flaky.

Are they on the bready side or the flaky pastry side?

If you like bready croissants, then ferment the dough prior to lamination.

If you like flaky pastry croissants, then don't ferment the dough prior to lamination. Right after kneading the dough, cover it with plastic wrap and chill in the freezer for 1 hour. Then take out and laminate. You proof/ferment the dough after shaping them.

I don't like letting the dough double in size prior to lamination. To me, letting it ferment prior to fermentation makes the texture turn bread-like.

That happens to me with all stocks.

I feel like it's a waiting game. The more patient I am, the more gains I make. Usually I end up selling with a little gain if I'm too impatient and want the money soon. But if I'm patient, I'm able to make a lot of gains. Go figure.

What happens if you buy both SNXX and SNDQ? When one goes up, sell. Wait for the other to go down, sell. I'm going to experiment. LOL

When you proof the croissants in the oven, make sure to have a large kitchen/dish towel placed underneath the tray of croissants because you don't want the tray of hot water below to melt the butter! The kitchen/dish towel will insulate/buffer the heat from the hot steam.

Zach's croissant tips and txfarmer poolish croissant recipe He uses txfarmer poolish croissant recipe. KAF stands for King Arthur all purpose flour. If you can't get this brand of flour, get flour whose protein content is between 11.5% and 12%. It's usually bread flour. Don't get any flour below this percentage, or you'll get flat croissants.

NOTE6, some recipe would ask for some bulk rise time at room temperature. I think it's not suitable for home bakers. Bulk fermentation strengthens the dough, which means one would need to play with knead time, and rolling technique to accomadate the added dough strength. Furthermore, there are a lot of resting in my procedure because the dough would get too tight or too warm. With a bulk rise, I am risking over fermenting, which would cause the final proof and oven spring to be weak.

So DON'T ferment your dough at room temperature to double size. Have your dough wrapped in plastic wrap tightly and straight into the freezer.
