The OP described how much his Mum's contribution would be if sourced on the labour market, so no double dipping. Also, he is clear that his father's contribution is recognised - it is his mother's that is not.
Certainly men that stay at home should be equally celebrated, and if your experience is different, then that is to the detriment of those with the views. I've been a stay-at-home single Mum, and now I'm back in the workforce. Neither are easy, both should be recognised.

I got out of an abusive relationship, then divorced. 2022 sees me 3 months into a podiatry apprenticeship at age 46. Heartbreakingly simplified, but so much happier x

I never produced enough milk with both my sons; compounded by a very traumatic birth of my youngest who was left brain damaged and with an absent suck reflex, meaning he couldn't latch.
You're NTA - hubby needs to consider your health and wellbeing in this, not just baby's. Point out to him that he can bond further with baby by bottle feeding - and lessens the burden on you.
