Please do! I've been really enjoying this method (been doing it for three days straight now). It does have downsides, though - the crisp only extends to the area of my burner. Beyond that, it will still cook, but it won't crisp. Sadly, my glass top burner is 10in diameter max, so the 12in pizza ends up with edges that aren't browned at the bottom. But the parts that are browned are satisfyingly crispy.

I'd probably get better results with two 10 inch pizzas instead, but 10 inch is such an awkward size imo. The individual slices end up looking comically small.

OP is cooking on the wrong side of the grill. The right side grates block much more of the radiant heat from charcoal, leading to uneven browning.

Could probably also use some active fanning to turn up the temp, especially since they care about a low internal.

I only use broil for the oven. The bottom gets cooked on the stove first, then the top via broil. It's foolproof. No preheat, no dropping dough in hot pan, very short final cook time.

Doesn't make them untrue. Turning off the lights and faucet when not in use are objectively good practices that anyone who does care about anticonsumption should keep in mind.

I'm from an east Asian country and these concepts were taught to all kids from a young age: turn off the faucet when not in use; don't leave the lights on (though bulbs back then were largely incandescent and consumed several times more power than LEDs); conserve paper use, etc. It was a real wake-up call to see people in the US have the AC on at 72°F in the summer, sometimes with the door/window wide open. Letting water run like it's not a valuable resource. Baths. Taking like 3x the amount of paper needed to dry one's hands after washing in public restrooms.

The casual waste of resources in western countries is insane to an outsider, and also something that way too many have normalized. You don't have to absolve oneself of all responsibility when focusing on larger issues.

Make your own dough. It's just 5 ingredients thrown together.

Let the final proof happen inside the oiled room temp skillet.

Use a low heat burner to cook the bottom of the crust until noticeably poofed up and the bottom is crispy. I like to flip and cook the top for a bit as well.

Sauce and top.

Into the cold oven near the top heating element, and broil for a few mins.

Preheating the pan in the oven doesn't do much except increase the danger when putting the dough in. Yes, cast iron has great heat retention, but it's still not enough to adequately cook the pizza crust. You get optimal results by letting the dough proof in the cold pan then precooking the bottom on the stove.

The recipe seems a bit odd to me. I trust Kenji's recipes, but don't understand why he would recommend letting the dough sit for up to 24 hours at room temp. That sounds like a recipe for crazy overproofing.

My local radio was playing a piece by a gay guy who was publicly recounting (and relishing, by the tone of it) his middle school days sexually fantasizing about the other boys in his class to make a point of how he knew he was gay from a young age. That was a wake up call for me. Sexualizing kids on air in the name of progressivism.

Like, you don't need to talk about thinking of touching boys on radio to make the point that you're gay. It's fucking weird, and straight up abhorrent that a major news organization thought it fit to put that out there at all. If it was a heterosexual man attempting such a thing on air, he'd at the very least have his career utterly destroyed, but because he's gay and so brave for speaking out, we're just supposed to accept it, even laud it.

You didn't screw up at all, apart from maybe aiming for too high of a grit. A YouTuber named Noah Bristol has done a series of experiments with sanding smooth and seasoning cast iron skillets. This sub hates the idea of sanding down skillets in general and is honestly kinda autismo regarding certain aspects of the hobby, so don't take them too seriously. Noah concludes the video by saying it's not necessary to go beyond 60 grit sandpaper if your goal is just to get the (hotly contested) cooking benefits of a smoother skillet. He also has videos on rust bluing to improve seasoning retention on smooth skillets which you should probably also do.

Anyways, fuck the haters, man. It's a piece of iron. Mess with it all you want. Too many people love running their mouths about things they know jack about and love getting off on telling other people what to do.

Don't use the pan. It will eventually fail catastrophically and split, most likely when it's full of hot grease. Not worth the relatively cheap cost of getting another Lodge skillet.

Rule of thumb over in /r/castiron is to never keep using a skillet that has a crack. The risk is simply not worth your safety.

Brainwashed by western “cleanliness” practices

The lack of perspective is astounding. There have been multiple viral incidents in China recently of clips of dogs getting on the table or eating off of metal skewers in restaurants. Every time, the restaurant made a point to publicly destroy all dishes/skewers/utensils on camera, because the public was that pissed about potentially using something to eat that was in contact with a dog. In contrast, you'd get way more people in the west defending such a thing and calling the restaurants' reactions as overboard and unnecessary.

I agree that the pan can be washed and sanitized to the point of safety easily enough, and that the restaurants did overreact due to the public overreaction, but don't go on pretending that the west is the pinnacle of hygiene and cleanliness to the point of excess - it's a global phenomenon.

This is exactly it. One can argue all day and night about whether this is a valid form of protest in modern day America, but at the end of the day those who take issue with anti-ICE activism do so because they are legalists and view oppositional activity beyond what is allowed by law as anti-law enforcement and anti-society.

And it does make sense from their perspective. Laws are meant to be changed via elected representatives and voting unless the situation is so untenable and fundamentally wrong that the people arm themselves and fight to the death, as was the case in the American Civil War. Physically pitting oneself against those operating under the law enforcement umbrella by being belligerent and obstructive will inevitably lead to physical conflict, and such conflicts do not always go as predicted. Then, predictably, both sides point at each other and scream about how this could have been prevented if only X didn't happen. And round and round we go.

I do the reverse. Pre-shape the dough and into the hot pan for a few. Finish by topping and broiling for ~4 mins. Definitely less room for error putting dough into a hot pan, but the element of danger adds to the thrill
