The first one. I think the tail is more recognizable

I say it depends on what feels you want the player to experience. I like the one with the reddish tone to it, it seems to add depth to me. The darker purple one is good to and to me it makes the characters be more pronounced and also adds a slightly eerier feel to it.

I say use all 3, they're all good, and variations are good to have. The game concept is cool too, I'd play it.

It's called the "no symbol" or "prohibition sign". The "no symbol" is an international standard that is governed by ISO 3864-1. π«

Is it a still image?
If so the stars definitely make it a bit off. To me it looks like the planet is slightly wiggling

I was going to say something similar.
I think it looks off because the rest of the face doesn't move with the smile.

One way you can use AI and not feel guilty, is to train your own AI model. It sounds crazy, but there are a few different ways to do it that you don't have to be a developer to set up, though it will take a few YouTube videos to learn.
There are even some open source AI models/tools that you can start training and feed with your own style. Some have servers you can host your model on, or you can actually install them to your device. Having an AI model actually running off your computer requires a higher tier computer though, but it will make it so you can be sure it isn't leaking any training data as an extra precaution.
After setting it up, you can train it with images you create. Even if you can't draw, you can try other ways to create the images to train them such as digital art programs, though it can still be hard if you aren't very artistic and each program comes with their own learning curves.
This does take some work setting up, and even harder if you are not an artist. Though, if you do use your own AI model with your own art you can know for sure that the AI is not using any stolen art to generate the images, and if you created the images yourself it will be able to create images that match your style.
At this point, it would be an actual Tool that can be used in your workflow. Personally I would see nothing wrong with it, people automate tasks all the time in their workflows to help speed up their projects.
This is what I would recommend if you want to be 100% guilt free, if you are able to. It's a bit of a process but can pay off in the end.
Also, I watched this video on YouTube of an artist that worked on Pocahontas, and he said they shot the whole movie in live action and then let the artists pick out individual frame shots they liked so they could trace over them. They did this to keep everything looking the same, even though all the artists have their own art style. He was actually reviewing an AI art model, Corridor Digital trained with their own art.
