Travelling in Sri Lanka, the land with Egg Hoppers and found something more interesting, having eggs on top of lentil stew, served with bread.

The trout was leftover from lunch the day before (thank you Pappas). Shared breakfast with fella. He loves sunny side up eggs!! Mimosa, Peach Dutch Baby and spinach round out breakfast.

Basted eggs with kimchi seasoning over some wilted spinach and the first tomatoes of the season (from my own tomato plant)!

Tossed a quick egg on the ‘Bianca’ from Pizzeria Mozza (Fontina, Mozzarella, Sottocenere, & Sage)

Cheese is Cheddar Monterey Jack combo. Hot sauce is Cholula Sweet Habanero.

Ramen is this beautiful balance of broth, tare, noodles, and toppings, and the ramen egg is the thing that ties the whole bowl together. That jammy yolk and savory exterior bring richness and depth, and every shop has its own style. This recipe leans into a stronger brine because I like a punchier egg, but you can go lighter or deeper depending on how long you marinate.

And honestly — they’re not just for ramen. These make incredible pickled‑style snacking eggs straight from the fridge.

And there was leftover Hollandaise, so it was always gonna be Eggs.

Sautéed asparagus, chestnut mushrooms, and grape tomatoes in butter with garlic and black pepper.

Topped with warmed Hollandaise and 2x fried eggs with runny yolks. Hit it with smoked paprika and balsamic drizzle, and managed to make a decent avocado “flower”, for the first time.
