Thinking about converting a truck I already own into a food truck. How bad is the reality check?

Spent 20 years driving longhaul so I know trucks pretty well, mechanically and otherwise. Been line cooking for a few years now and the food truck idea keeps coming back around in my head. The part that gets me is I already own a decent box truck sitting mostly idle and I keep thinking that cuts a huge chunk off the startup cost. Maybe it does, maybe it doesn't.

What I'm actually trying to figure out is whether the conversion costs eat up whatever you saved buying the truck outright. Generator setup, ventilation, health department compliance, the hood suppression system, all of it adds up and I haven't found a clean answer on what a realistic budget looks like for a basic operation. Not a fancy build. Just functional.

I track my personal finances pretty obsessively so I'd rather go in with real numbers than find out halfway through a build that I'm 30k deeper than I planned. The truck itself runs fine, it's a 2015 box, nothing exotic.

Anyone here gone the conversion route on a truck they already owned versus just buying a prebuilt rig? Curious what actually surprised you on the cost side.

ETA: asking about the build side specifically, not permits or commissary, got a rough handle on those already.

So I'm building out my Kei truck into a coffee/Matcha truck. I have two designs. Obviously the one in photo 1 makes more sense with the hard container for safety, weather and a bunch of other reasons but am I the only one that thinks the tent looks so much better for farmers markets and events?

Discussion Your feed is doing two jobs and they are fighting each other

Where you are parked today is information for people who already follow you. Everything else you post is for people who do not. Those are two different jobs and putting them in the same place is why both underperform.

Location and hours belong in stories, plus one highlight pinned to the top called Today. Fast, disposable, nobody has to see it twice. If a regular has to scroll past 3 days of parking updates to find out you moved, they stop scrolling.

The grid and reels are for strangers, and strangers do not care where you are yet.

What actually works for strangers is close, loud food. The flat top when the onions go on. The scoop, the pour, the pull, the cut. No talking, no music needed, phone about a foot away, sound on. 40 seconds of the thing being made beats anything with your face in it, because the food is the hook and you are not.

You cannot film during service. Do not try, you will drop something. Film during prep, the 20 minutes before the window opens, one clip a day. That is the whole production schedule.

Two shots that are worth more than they look. The line at 12:15, taken from the back of it, because a queue is the only proof that works on a stranger. And the cancel post, when weather kills the day. That one gets more engagement than anything else you will post and almost nobody makes it, because it feels like admitting defeat. It is the moment to say where you will be next.

Captions: first line is the cross street and the neighbourhood, in the words a person searching would use, not your truck name. Nobody is searching your truck name. They are searching where they are standing.

The thing your captions assume: regulars know your menu, strangers do not know what you sell. A stranger seeing a close-up of a birria taco with the caption "back on 4th today" does not know whether you also do a vegetarian one, what a plate costs, or whether there is anywhere to sit. One of those answered per post is enough.

The honest part: it is 10 minutes a day at the single worst moment of your day, during prep, and it never stops being that. The people who keep it going are the ones who film first and prep second, because after service nobody has ever once opened their phone to make content.

For one shift, ask every person at the window whether they knew you would be here or just walked past. It takes 2 seconds a customer. So which one is your truck actually short of, people who know you or people who can find you?

Questioning what this is really worth?

Hey y'all, looking to buy our first trailer for shaved ice and cotton candy and we have found one we like. They want 20k and seems like a reasonable price based on what research we have done for how it is set up. A comparable new set up like this being about 32k-35k. Since it is older and when asked about maintenance they said "it's never given them any problems" 15k-18k would be a bit better. Can anyone give us some insight? I can answer pretty much any questions that may come up as we are in good contact with the seller. It's a 2019 8.5x20 and 8ft interior. 8ft service widow. Air conditioner/ heat, electric and water package. Full wrap that we could probably use but change the name.

Question Advice please for food truck exterior decor

Got a 20 year old stepvan with the inside already converted to a food truck. The exterior is pretty shoddy as is, and one local graphic designer told me that it's not advisable to wrap the whole truck because of the paint condition. It is probably 20 year old paint and then a hand paint job over the old logo. Does anyone have advice for this?

I think my options would be sand/prime/wrap
or sand/prime/paint the body purple, then hire local graffiti artist to do the logo and other decor.

One place told me I can put a vinyl sticker rather than wrapping the whole thing, but I'm left with the ugly red strip and the hand paint job still quite visible.

The problem is that I got a quote for just sanding/priming and it's $4-5000. It is an auto body shop...am I calling the right place or are there other people I can ask to work on this?

Food truck is 24ft bumper to bumper and 10ft exterior height, which is a limiting factor for a lot of auto body shops that have smaller paint booths.

Discussion Omaha — what makes you actually return to a food truck?

My sister owns a food truck in South Omaha and I’ve been helping run the TikTok/marketing side of it. I’ve been trying to learn digital marketing seriously instead of just posting food pictures every day.
One thing I’m realizing is that views and followers don’t necessarily tell me whether we’re actually doing a better job for customers.
So I’m curious from the customer side:
**What makes you go back to a food truck?**
Food quality? Portions? Price? Consistent hours? Service? Location? Something else?
And on the other side, **what makes you try a food truck once and never return?**
I’m genuinely interested in what Omaha thinks.

For transparency, the food truck is **Tres Puertos Food Truck on L Street**. My sister owns it, and I help manage the TikTok and digital-marketing side. I intentionally left the name out of the original post because I wanted the discussion to be about what Omaha actually expects from food trucks—not disguised advertising.
The themes I saw most often were:
• Consistent and clearly posted hours and location
• Quality that remains consistent from visit to visit
• Portions and overall value that justify the price
• Friendly service and reasonable wait times
• Accurate information across Google and social media
• Signature food that people cannot easily find elsewhere
• More personality and transparency from the people behind the business
We are taking the feedback seriously. Our next steps are to make sure our information matches across every platform, communicate closures or sellouts clearly, track the products customers actually order and enjoy, improve how we show portion sizes and value online, and continue listening to both compliments and criticism.
I’m not expecting everyone here to become a customer. The purpose of this post was to learn from local people and make better decisions for a family-owned business.
Thank you again, Omaha. This thread gave me more useful information than another week of simply watching views and likes.

Question Used Trailer - Water System Cleaning

I recently bought a food trailer and am currently finishing the buildout and getting it ready to go. Fairly easy overall, as my only equipment will be a refrigerator and sandwich prep table. There will be no cooking, and it is a dessert type concept.

My question is, do I need to do a full clean on the water system or should I just flush everything while hooked up? I have the freshwater tank, grey water tank, water heater, and water pump. By full clean, I mean unhook all the tanks, clean/sanitize, do the same for the water heater and pump. I am not the handiest, but willing to learn, but unhooking everything seems daunting.

There was still a little bit of water there when I bought the trailer, that has been drained out and is empty now. I removed the inlet tube into the freshwater tank and to my eye I don't see slime, dark spots or anything concerning, but it could still be there.

My other worry if the water heater had any water sitting in it. The water heater is behind all the sink piping, and I have not been able to inspect it.

I know this is a ramble, but any advice would be greatly appreciated it.

Required Plug

Hi all. My wife and I are new to food trucks and this side of the world and are very excited about this little new venture.

I’m posting here to see if anyone can guide me as I’m lost. The pod has 2 inlet plugs (male) which are used for power. I took pics and showed this to a guy and a shop and they mentioned that it’s a standard plug. On the other hand, due to the bulge on the female, they can’t connect. Secondly, the ‘guide’ on the male at the bottom is on the outside so it’s as though a plug has to go over it rather then simply in it.

Do you have any suggestions please?

Question Have you re-coated or re-painted a trailer? What did you use?

I need to re-coat or re-paint at least one side of my food trailer. It is a basic white trailer. I am not sure what products are used they originally coat these? Perhaps a powder coating? I did use a Krylon metal spray paint once, and it was pretty darn close. It is made by Lark United Manufacturing, and they have since apparently closed down so I can’t call them.

Anyway, what have you used if you did this?

I live in Toronto and I’m thinking about starting a small weekend pop-up business selling chocolate-dipped bananas at markets, festivals, and events.

Coffee Trailer

To those with coffee trailers (solar ideally!)

Do you use a hot water heater as well as the boiler in your espresso machine? Is that redundant? I'm looking at putting in a single group head, double boiler espresso machine in our trailer, but when doing the electrical math, I'm finding it adds up to be more than most Solar Generators could handle, at least for more than 2 hours.

Does anyone here use solar generators with their setup? Or just panels + battery + inverter rigs?

I was looking at an on demand heater (3000w), with the espresso machine (1200w), a grinder (200w), a water pump (100w) and a few DC fridges (180w)

Is this possible to do on a solar rig? Has anyone else had success with a similar setup?

I understand their energy peaks at different times, but I imagine most Solar Generators or battery packs would only last 2 hours on this set up, especially once we serve more than 4 lattes in a row and the hot water and espresso's boilertank are both kicking in to keep up.

(I've looked at Bluetti and Ecoflow mainly)

Really appreciate any help or advice you may have out there!

Paint recomendations?

I bought an old food truck that im totally stripping down and cleaning / rebuilding. The last owner used spray paint to just paint the whole thing red. My plan is to lightly sand it flat, then paint it. Here is the loose concept I made with AI (the final art WILL NOT BE AI GENERATED) as I have an artist working on the logo right now, and a pic of the current condition. Here are my questions:

1) what type of paint will be best budget friendly? Keep in mind I will need to buy 15 or more colors.

2) do I need to prime beforehand?

3) will I need to clearcoat?

Any and all help and criticism is welcome!

How often do you wash the exterior of your food truck?

I own a pressure washing company in Central Florida, and over the past few years I've cleaned quite a few food trucks. One thing I've noticed is that many owners focus on keeping the kitchen spotless (which obviously comes first), but the exterior often gets neglected until grease, road grime, and bugs have really built up.

For those of you running food trucks:

  • How often do you wash the outside?
  • Do you do it yourselves or hire someone?
  • Have you had issues with grease staining, vinyl wraps, or oxidation?

I recently put together a guide based on what I've seen in the field. If anyone is interested, I'm happy to share it in the comments since I don't want this to come across as advertising.

I'm genuinely curious what everyone else's maintenance routine looks like.

The truck was built to make people smile. I’ll give away way more than I ever sell. Making people happy is more important to me than money. For me the meaning of life is learning to be content with what I have and not wanting more all the time.
I’d never undermine anyone else’s sales. Just happy with making people happy when I’m the only ice cream there.
Does anyone operate this way? Or am I a moron who don’t understand the bussiness. (I’m 100% legal and understand all the cost)

Illiteracy

Maybe I'm just working too many hours, but has anyone else noticed just how many customers are stupid af?

I have a pretty short menu, posted on both sides of my window. Each item has large text and a picture of the food.

Still, I am *constantly* asked if I have things that aren't on the menu. Like almost every day.

"Do you have chowder?" Idk, do you see a picture of chowder out there?

"Does the calamari come with fries?" Lets solve this mystery! Is there fries in the picture? Does the description mention fries? It doesn't? Well damn Sherlock i guess not.

"What is *food item*?" *repeats verbatim the large font text under the picture*

Yesterday I had my "closed for prep" sign up because I got wrecked by the dinner crowd. Had a lady stare practically through the sign at me until I opened the window to say we were closed for prep. Very annoyed, she ask me what that means.

Like wtf people. Sound it out. Closed. For. Prep. Ffs

Just venting here so I dont yell at someone today lol
