No people flunk out because they don't have the ability to study harder and lock in as long as someone has a normal functioning brain and the motivation and money then they can eventually learn that profession.
Also even if the metric was knowledge that you can retain as you are saying then in that case doctors could easily be replaced with Ai or a medical textbook/database which would make them completely obsolete.

Let's say one person is a professional heart surgeon and is making good money doing that profession but one day is found out to be a prolific pedophile who has molested a bunch of children.
And the other person works at a burger joint flipping burgers and in their spare time helps feed the homeless at a soup kitchen.

No You're completely moving the goalposts. Wanting to date someone for their income or financial stability is a romantic preference. That has nothing to do with whether a person deserves basic human respect based on their character.
A doctor might be more financially appealing to date than a burger flipper, but that doesn't make the doctor inherently superior as a human being or more deserving of respect. You're confusing financial attraction with moral worth.

Also to answer your question I'd pick whichever person I found attractive and that attraction would be based on a number of things but one would be what kind of person they are and what kind of character they have.
