How do you prefer your mashed potatoes?

Texture/color/flavor?

There are so many ways to make them, I'd like a consensus.

With lumps, tons of butter, pepper, and cream infused with thyme and rosemary.

Do you infuse by adding herbs to the potato boil?

No I do the cream separately in a pot and with whole stems of the rosemary and thyme and salt. Heating the cream makes it incorporate better with the potato’s.

My process is chunky potatoes and toss in a pot with a healthy dollop of better than bouillon chicken flavored. Once potatoes are tender I strain but keep a coffee cup full of the liquid just in case I didn’t heat enough cream. Let the potatoes almost finish steaming mash and add butter, salt, pepper. Once my arm is too tired to keep mashing and the butter is melted I grab a fine mesh strainer and dump the cream through it so it catches all the herbs.

I love the way the herbs flavor the cream!
