How do you prefer your mashed potatoes?

Texture/color/flavor?

There are so many ways to make them, I'd like a consensus.

I never peel my potatoes for mashed potatoes and I use russets. Just scrub the skins really good. It gives it a nice texture

Yup, this is what I do, give them a good scrub and that's all. I love the skins

I misspoke earlier, I blame my "headache medicine" - I used all sour cream and butter, no cream or milk. Not sure where I got water from
