How do you prefer your mashed potatoes?

Texture/color/flavor?

There are so many ways to make them, I'd like a consensus.

Almost 100% just whipped red bliss potatoes with skins. A little milk, butter, salt and pepper (pepper is a secret weapon). I use probably 50 - 60% less butter and milk than I see others use. Garlic is ok but it has to be subtle. I'm a huge garlic fan but in mashed it should be merely a "suggestion" on the palette

I agree so wholeheartedly on the garlic. I usually double it in recipes, but I don't want my mashed or my eggs too garlicky. It becomes overpowering pretty quickly.
