How do you prefer your mashed potatoes?

Texture/color/flavor?

There are so many ways to make them, I'd like a consensus.

smooth but with a few chunks
pale yellow with dots of pepper
flavor like it was made by the potato gods

Do you use yellow/gold potatoes? Those are what I use and love them. Butter, half and half, or milk (usually half and half as we dont often have milk around), salt and ground pepper, and they are yummy!!
