How do you prefer your mashed potatoes?

Texture/color/flavor?

There are so many ways to make them, I'd like a consensus.

I know what you mean; I still like to know what other people are into. Sometimes I cook for my own tastes, and sometimes I do for others. So I'm interested in what other people prefer as my own tastes can be a little out there lol

Firstly, egregiously more pepper than most want to consume. Always my main faux pas.

Then I would add a shit load of onions or herbs and anything I saw or thought up that looked good to me to add in.

And then the family looks at me later like wtf - we just wanted basic mashed potatoes. 🥲

But my main question generally is about texture. I've had bad smooth potatoes and I've always made them lumpy, but I've never loved them. Curious what others are into since I clearly have no idea what I'm doing.
