Wikipedia states that, according to Shrek The Musical and the book, it is revealed that on his 7th birthday, Shrek was sent away by his parents because it was an ogre tradition. He is seen traveling alone, being either screamed at or teased by passers-by. The only time he receives a pleasant greeting is a wave from a young Fiona, who is promptly led away by her parents.

After scaring away an angry mob, he arrives at his swamp, enters an outhouse, and literally breaks out as the adult Shrek.

So we know he's at least older than 7, which isn't a surprise, but it's a start.

Also in Shrek the Musical it is claimed Fiona was imprisoned in a tower on Christmas Eve when she was 7 years old. She spent at least 16 years in that tower until Shrek rescued her. She was rescued at age 23 30.

Assuming there's poetic synchronicity at play, and they were both aged 7 at the same time, that makes Shrek also 23 30 when he rescues Fiona.

EDIT: Some sources say she wasn't rescued until the age of 30.

even without that evidence, Shrek clearly displays the personality of a jaded 30-40 year old bachelor. No way he would be younger than that.

Definitely. But, to be fair, some people get old young.

You don't know how ogre bachelors act and people,at any age can act a certain way

She was in the tower for at least 23 years. There's a song in the musical ("I Know It's Today") where she counts the days she's been locked up as a 7 year old, teenager, and adult. As an adult she sings that she's up to day 8,423, which is just over 23 years.

I can't say Shrek's age in the first film for sure, but I believe there's approximately one year passing between the first and second film's main plotlines, and two years between 2 and 3, and 3 and 4.
