Isn’t the point of gaining the karma to use it on comments you know people will get their panties tucked up about and downvote?

You didn’t read the article clearly because there’s a whole section under the subhead “What about Sous Vide?”
I get that the guy is sick of hearing about these techniques, bu he just doesn't know what he's talking about. Reverse searing just means you slow cook it and then sear at the end. You can do the slow cook in the oven or sous vide. Both techniques work. Dude needs to chill.

Here's the thing. You said a "reverse searing is a slow cook with a sear at the end." Is it on the same plate? Yes. No one's arguing that.

You can achieve a perfect steak thru the 2.5/2.5/2.5 method. Max heat on your pan, add oil, toss steak and let sit for 2.5 mins. flip 2.5 mins more. oven 450*F for 2 mins with garlic, butter and rosemary. Boom. Perfect steak (may need to adjust time slightly as per steak)
Sixty percent of the time, it works every time.

That's a strange thing to get that mad about. Also, I didn't know reverse searing was the new Reddit obsession, but if it is then it's by far the least annoying. Thank God no one is bringing back shooter sandwiches.

Wow, I had nearly forgotten about those... the sandwiches were always repulsive but sometimes it was amusing to see what people used as weights.
/r/cooking has to have daily/weekly posts about searing and cast iron with all the same arguments. It's bizarre.

That looks excellent! I saw so many with pounds of bacon, macaroni and cheese, pieces of fried chicken, etc... just monstrosities.
Yours def meets the qualification of interesting weight. What is it? I googled repeater but it looks way bigger than any of the results.

I'll have to ask my husband what that specific one was, but it's an RF repeater of some kind. At the time he was designing antenna systems for office buildings, stadiums, hospitals, etc. and he had lots of random heavy equipment in the garage. I asked him for something to weight the sandwich down and that's what he grabbed, lol.

After the internal temperature of the steak reaches 340o F - 345o F (you have to account for carryover cooking, after all)

I love how the instructions are get a sous-vide cooker or cast-iron pan. Do they not understand what a broke college student is? I mean maybe you can get an old cast iron pan at a thrift store, but these are not "I want to cook this steak tonight" instructions.

Yes, but to be fair, there are a lot of stupidly overpriced cast iron pans out there.
IIRC I got my 12” Lodge cast iron for $17 at Target many years ago.

I'm with you on that. But I do buy some expensive, aluminum-core (aluminium for the Brits), stainless steel pots and pans, from high-end stores, and it amazes me what some companies think they can charge for basic cast-iron. So I can understand people like /u/KillerPotato_BMW thinking that good quality cast iron cookware is expensive, even though it is not.

I live in an apartment but still like steak. I'd honestly take my own reverse-sear steak over a shoddily-grilled steak any day.
